A&S Recipes: Jen and Dianne’s Pancit

This month, we’re celebrating 45 years of tradition. All month, we’ll be sharing the traditional recipes that the A&S team enjoys during the holiday season—a little gift from our family to yours. 

Here is a traditional Filipino dish from Jen Lopez and Dianne Mariano, two of our real estate experts

“This dish represents long life and good health. Whether you believe in the symbolism or not, pancit will surely satisfy your hunger and it will always be a great reminder of how truly important every single string of life is.” 

Although there are a variety of ways to cook this dish, Jen and Dianne agree that these are the key ingredients you’ll need to make a traditional Filipino pancit.

Ingredients: 

– 1 (12 oz.) package dried rice noodles 

– 1 tsp. vegetable oil 

– 1 onion, finely diced 

– 3 cloves garlic, minced 

– 2 cups cooked chicken breast, diced 

– 1 small head of cabbage, thinly sliced 

– 4 carrots, thinly sliced 

– ¼ cup soy sauce 

– 2 lemons, cut into wedges for garnish

Instructions:  

  1. Place the rice noodles in a large bowl and cover with warm water. When the noodles are soft, drain and set aside.
  2. Heat oil in a wok over medium heat. 
  3. Saute onion and garlic until soft. 
  4. Stir in chicken, cabbage, carrots, and soy sauce. Cook until cabbage begins to soften. 
  5. Add noodles and cook until heated through, stirring constantly. 
  6. Transfer pancit to a serving dish and garnish with lemon wedges.
